Rice Noodle in Fish Paste Soup is a hallmark of Wuhan’s Guo Zao(breakfast) culture, which originated in the city’s dock districts. Fresh catfish or crucian carp is simmered until the bones dissolve, forming a dense, milky broth enriched with rice slurry and pepper.
